WOD-MOD wk 10 {try, try, try again}

After last week's WOD-MOD our special guest, Jonah-Kai, offered to host the MOD part of the evening. We happily excepted.  Jonah, thank you for hosting and putting up our antics! 

WOD{there is no "i" in team}

Meredith and I paid a visit to Stoneway Crossfit.  A while back we bought 30 classes for $39 - an awesome deal at a great gym! It is always nice when you can actually purchase and use one of the million daily deals that fill our email boxes every day.

It was a fantastic WOD.

MOD {try, try, try again}

So, Merideth and I decided we would let Jonah-Kai deal with the menu and do most of the cooking. We were put in charge of the yam fries (upon Jonah's request), aioli and wine. As soon as we finished up our WOD we jetted off the the store to get some wine and a few more ingredients for the aioli. Prior to heading to the gym I cut up the yams and had them sitting in water in a snap ware bin in my care - I am a planner!! made our purchases and made the 5 minute drive to Jonah's house.  As we were gathering our goods from the car something very tragic happened....the wine slipped out of Meridith's hand!  


After taking a few photos and getting the large pieces of glass off the road, we made our way into the house with the smell of wine on our hands and Meredith very sad (I am not a big wine person, so this wasn't a huge tragedy for me). We walked in to see the guest chef already hard at work. After giving him the lowdown on the mishap with the wine, Mer and I got to our duties. 

While Meredith dealt with the yam frites, I got to the mayo/aioli. For the yams we were trying a technique of tossing the water soaked and dried yams in egg white.  I had already check with Jonah to see if he had a food processor or blender - he had a blender, so this would gadget for making the mayo.  I broke out his Oster blender which has 2 speeds: on and off.  I dropped an egg yolk, mustard and some apple cider vinegar in the bad boy and blended it up and began to SLOWLY add the olive oil.  I continued to slowly add the oil waiting for it to start to emulsify...I waited and waited, nothing was happening.  Ugh! After adding the last of the oil it was still a runny mess. I was sooooo frustrated.  I think I added the oil a little too fast. To add to our frustration, this was the last of the pure olive oil. Remember, if you make it with extra virgin it doesn't have the best taste.  Now both Merideth and I were very depressed about our evenings mishaps. Mer and I decided we would leave the chef and make our way to the store to retrieve more wine and olive oil.  But before leaving we needed to check the frites. Sigh! We quickly realized we forgot to add a little olive oil, salt and pepper to the frites prior to throwing them in the oven...Jonah rushed us out of the house and said he would deal with them. At this point we just had to laugh at ourselves! 

We quickly made our way back from the store - she popped open the wine and I got to round 2 of the oil. This time I added a whole egg and SLOWLY, really slooooowly added the oil. It was starting to thicken up- yahoo! Now remember, this is a little Oster with two speeds- this baby was working hard.  I could see that it was starting to actually warm the aioli. no bueno. Just as I was about to turn if off it turned to liquid...just-like-that. Why!!!  If only he had a vitamix. :-)  We were trying to decide if we just scratch the aioli idea or go for try #3.  We decided we would give it one more shot with the stand mixer.  I got to it and it was working. Thank.God! Just in the nick of time we had some aioli to go with our meal. yahoo! 

This was a true testament to being persistent and trying again.

Ok, now that we shared that story I will share our meal!



salmon quinoa kale lettuce wraps

Jonah used this Salmon Cakes with Quinoa and Kale recipe for inspiration.  He added smoked salmon and rather than making cakes he left it free form and we wrapped up the goodness in lettuce. We topped the wraps with a tasty yogurt dill sauce.

1/4 cup greek nonfat yogurt, plain
1 tsp sugar
1 Tbsp chopped fresh dill
Zest of 1/2 lemon + 1 Tbsp lemon juice
1 Tbsp rice vinegar

We (mostly) followed this technique

chipotle aioli {success!} 

right- plain. left - chipotle
2 dried chipotle peppers, soaked
mayonnaise

Method

1. Soak the dried chipotle peppers for 15-20 minutes.
2. Finely chop the peppers. Remove or keep the seeds, depending on spice preference
3. Gently fold the chopped peppers into the mayo.  Enjoy!
